Ganyu is an amazing character and one of the few that can afford to say that he can be a Top Tier character in both the Main DPS and Support DPS roles. He's usually used in Permafrost compositions fulfilling either of the two roles (according to your preference) or also in Melted compositions, but in these he has to be the Main DPS to be able to deal brutal damage with his Charged Attacks.

In this Build Ganyu must be the Main DPS of the team and here her configuration changes a lot since we'll use her in teams with Pyro, Anemo or Dendro characters.
